Raspberry Shrub

Cool off by enjoying this delicious summer drink.

Ingredients

Raspberries
Vinegar
Sugar

Instructions

"Raspberry Shrub mixed with water is a pure, delicious drink for summer; and in a country where raspberries are abundant, it is good economy to make it answer instead of Port and Catalonia wine. Put raspberries in a pan, and scarcely cover them with strong vinegar. Add a pint of sugar to a pint of juice (of this you can judge by first trying your pan to see how much it holds); scald it, skim it, and bottle it when cold." - The American Frugal Housewife by Lydia Maria Child, 1832

  1. Cover raspberries with vinegar in a kettle. Do not use cast iron.
  2. Simmer until berries are soft.
  3. Strain through cheesecloth. Measure juice.
  4. For each cup of juice, add 1 cup of sugar.
  5. Bring juice and sugar just to a coil, skim the top, and ladle into sterilized glass jars. Keep cold or seal jars to store.
  6. To serve, mix shrub with water to taste.
